Sun Dried Tomatoes
5 Roma tomatoes
salt & pepper to taste
1/2 cup Balsamic vinagrette
1 cup extra virgin olive oil
Sea salt
Freshly ground black pepper
baking sheet with sides
Wash and dry tomatoes
Slice as thin as possible, 1/4 in if you can arrange on the cookie sheet
Sprinkle the salt & pepper over the top.Drizzle the balsamic vinegar over the top,1/4 cup, to each side.
Bake in a 300 degree oven for 30 minutes. Turn the tomatoes over gently,repeat the steps.
Bake for 30 minutes more.Remove from oven.Let them come to room temp.
Place them in a bowl add the virgin olive oil.Mix gently and refrigerate in a tightly sealed container for 3 days max.
Great for pasta dishes or grilled sandwiches.
Makes about 3 cups.
**Before using the tomatoes for sandwiches or pasta dishes,remove from the fridge,and let them come to room temp.It makes them easy to use.
