Go for the one with similar prep to your usual colorants. If you usually disperse in oil pick up that one, if not go for the other.

It would absolutely suck to have the perfect batter for an intricate swirl and mess it up because you went on auto pilot when mixing your colors. We don’t think we’re heading into auto pilot but it always happens at the worst times. It becomes double suck when soap takes at least a day to even see how a loaf turned out (ignoring the month/s it takes to use it)
 
I've tried both and personally prefer water dispersible. I always had a bit of trouble getting the oil dispersible totally dissolved and always had little pieces. I tried making it ahead of time in a bottle with little ball bearings in it but still had problems. Had to strain it. They both work though. I just use a little water from my batch to mix it.
