Gelling vs Non-Gelling

I've heard several people state they don't let their soap go thru the gel stage. Could someone explain why this wouldn't be done or what benefits each stage has?
 
I try not to gel. Ungelled soaps look creamier and more opaque. I soap cool and stick the mold in the freezer. Some say it takes longer to saponify and it may zap for a bit longer, but I've never experienced any zap on either gelled or ungelled soaps. Try both ways and see which you like better. There's no real advantage or disadvantage to either.
 
What I did to understand gel was to split one batch in two; put one small mold in the freezer and the other wrapped in a blanket. The visual difference is very apparent then. I did not add FO or EO though. Now that I read this thread I may start putting my EOs in the freezer because I lost a bit of scent on my last few batches but prefer the colors that the soap became by gelling.
