What if I don't cure for 4 weeks?

I too have sold prior to the 4 week cure. Same reason, out of cured stock, and I let my customers know that it is safe to use now but will be better if they wait a couple of weeks before using it ( giving them all the reasons etc). Never had any problems doing this, but of course I don't make a habit of it either.

... a younger soap seems faster to lather because it isn't so dry.

This has been my experience as well - often my bars at 2 weeks lather as well if not better than my 2 year old bars.

So we all agree that an 8+ week bar is best, but then I find the scent on the outside has dulled until the bar is in the shower, how do we get a good long cure while preserving the scent of a younger bar.. Ah soaper problems.

And yes, I do label my bars correctly but that's another topic entirely isn't it.

You can always plane off a small amount to get to the stronger odor right before packaging/packing for shipping/selling.
