So I made a CP coconut oil soap for laundry. It took about 40 mins with a hand blender to trace!

When I cut the soap it was super hard and brokeapart (good thing I wasn't trying to make pretty bars). I wanted to zap test it the next day to see what the zap would be like, and there was nothing, no zap. Thought this was supposed to cure for at least 3 weeks? Is it maybe that there was too much oils and I don't really have my non superfatted laundry soap?

The recipie was this:

33 oz coconut oil (76)
12 oz water
5.9 oz lye

If the soap went through a full gel then it won't zap. It still needs a few weeks to finish curing. Since you said it was brittle that sounds like a zero superfat to me so you should be ok for laundry soap.

If you have the space it will be easier to shred while still new and will dry faster spread out.
