I saw this idea online and thought it was cute. Take a jigsaw puzzle apart and put the pieces in little bags numbered 1-24. Starting on December 1, each day one bag is opened and the piece(s) are added to the puzzle. Be sure that the new piece has a place to connect to on the completed part. I got the boxes to store the unopened bags at the dollar store.

My grandchildren are little, so the 2 year old's puzzle is 24 pieces and the almost 4 year old's is 48 pieces. I know they will need help, but one or two pieces a day won't overwhelm them or take a lot of time for mom or dad. Also letting the adults know which corner to start in. Just wanted to share the idea.
