I know anything with vanilla discolours pretty badly, but are there other fragrance types that usually discolours? Like florals, or fruits or anything? I'm trying to make a pure white bar, and don't know what scent to use, as the site I get my FOs from doesn't give any info on how the scents react in CP.

It is my understanding that some spice scents discolor, but I'm not sure which

Watch out when using blends, because a lot of them have vanilla in them. You might not notice and get discoloration from them.

Oatmeal, milk and honey turns my soap a gorgeous color that works just perfectly (looks just like what O,M&H should look like). Some sites list their vanilla content and some list what they do to CP soap.
Florals definately tend to seize soap. Lilac I have to fragrance before I hit any kind of trace, or I end up with a solid mass where I put the fragrance in, and lumpy soap that looks like hot process (which it ends up being after rebatch).
