Ingredients:
•2 green bell peppers
•1 tablespoons butter
•1/4 cup chopped onion
•1/42 cup chopped mushrooms (or celery)
•1/2 c can diced tomatoes (Italian flavored)
•1/4 clove garlic, crushed
•1 egg, lightly beaten
•1 1/2 teaspoons Worcestershire sauce
•1/2 ground meat substitute
•1/2 cup prepared minute rice
•1 slice American cheese
•worsteshire or Jamaicaan pick-a-peppa suace to taste
•salt & peper to tatse

Preparation:
Cut tops off peppers; remove seeds and membranes. Place peppers in a large pot; cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside.

Prepare minute rice & set aside.

Heat butter in a large skillet over medium heat until hot. Sauté chopped onion, and chopped mushrooms/celery, for about 5 minutes, or until vegetables are tender. Add 1/2 tomatoes, meat sub, crushed garlic, and seasoning to taste. Simmer for about 10 minutes.

In a large mixing bowl, combine egg, minute rice, veggie meat sub mixture. Gently stir to blend. Stuff peppers 1/2 full with, layer 1/2 slice of cheese & then fill w/ mixture. Place in a baking dish. Pour remaining tomato mixture over the stuffed peppers. Bake at 350° for 55 to 65 minutes. If desired, top stuffed peppers with a remaining cheese just before peppers are done; bake until cheese is melted.
Recipe for stuffed peppers serves 2.
