Ditto on Bud's cutter being awesome. I have the single bar one and love it.

You might also want to check out Nurture Soap. I hear good things about their tank cutters.
 
You can't go wrong with any of Bud's cutters. I was lucky to score one of his mod1 cutters on a FB destash group for $80! I would love to get one of his log splitters and single bar cutters but it's not in the budget right now.
 
Do you have any woodworking tools/skills? If so, you can probably build one quicker than you can find a used one (folks tend to hang on to them until they're looking to upgrade). My only other suggestion is to buy a cheapie wire cheese cutter like this one . . . I used one for years and get much better cuts than with a knife.
