I remember now reading that goats milk soap can get too hot and crack, but unfortunately I forgot that and tucked mine in tightly. If it looks like this in the mold, does that mean it’s going to be brittle when I cut it?

It will depend on your recipe. If they are firm enough I would get them out of the molds and try to cut them. They most certainly overheated. Hopefully you don't have a mess when you take them out. Any milk soap has the potential to overheat. I watch them like a hawk.
 
I usually pop my milk soaps in the freezer after pouring to keep them from gelling and overheating. I leave the soap there a couple of days before unmolding,
