I know slow cookers are relatively inexpensive but I'm curious if a slow cooker is safe to use for food after making HP soap and being cleaned thoroughly.

If the lid is plastic, it will get pitted and ugly from soaping. Better to go to a thrift store and buy one of the old non-removable crock types for a couple of dollars.
 
For occasional use, I think it would be safe as long as you clean it well. It might be difficult to remove the soap smell and taste though. Susie is right that they're cheap and easy to find at thrift stores, andthat would be my advice too if you plan to HP with any regularity.
