I'm a bit late to this discussion, but does anyone know what the saponification value of elk fat/tallow is? I'm guessing it will be very similar to deer tallow. One of my neighbors has a herd of elk. (I had no idea that randy male elk calls can sound like poorly oiled freight trains! Life is full of random surprises!
