Just made some eggplant parmagana with my leftover marinara sauce ...mmmmm

How did you cook it? Sauteed plain or breaded?

My garden yielded only 1 edible eggplant last year. Bushes were so sorry looking and bare. The only healthy fruit looked sorta like a big bloated tick against the sparse leaves, not appetizing.
