I am working on creating a hot process glycerin melt and pour soap but the pH is at 12.5 right now.

Ingredients:
Coconut Oil
Palm Oil
Safflower Oil
Sodium Hydroxide/Water
Glycerin
Propylene Glycol
Sorbitol 70% solution

This is my first time making soap so I'm not really sure how to do the pH adjustment for this. I checked pH after the soap was almost fully dissolved in the propylene glycol and sorbitol. Should I check pH sooner?

What are you trying to lower the ph to, and why? Lye soap is always very alkaline, and the soap molecules start unraveling so to speak if the ph gets too low. It can't clean things if you destroy the basic (versus acidic) bonds that make it soap.
I'm assuming that the problem is not that it is lye-heavy, which would be a different matter. Does it pass the zap test?
