I assumed that clays and AC wouldn't change coloring over time. Only plant based colorants would. Is this a safe assumption?

That is generally true - clay and charcoal don't usually fade. Some natural colourants fade a lot, but some stick around for a long time.
I've got a 10 year old paprika soap that is still an orangey-red colour, and coloidal oatmeal will stay a creamy colour (as two ends of the scale).

Just about any chlorophyll based colour (plant green) will turn brown over time.

Cocoa and coffee don't tend to fade much. Poppy seeds don't change colour.

A lot of natural purples tend to go brown like greens do. Lavender always turns brown.
