My sister bought almond milk when she was here for Thanksgiving- it doesn't sound like it has much benefit in soap. Anyone have any other recipes I could use it in?
 
These were the most amazing sweet potatoes that a friend made for Thanksgiving. Because she is celiac and allergic to dairy, she made it with almond milk instead of cream, GF flour, and vegan "butter." I rarely take more than a couple bites of sweet potatoes, but I went back for seconds of this dish. It won't use up much of your almond milk, but it's a start. Personally, I'd use the rest to make a smoothie. ;)

Ingredients
5 medium sweet potatoes
2 eggs
1⁄2 cup white sugar
1⁄3 cup butter or ghee
2 T cream (almond milk)
1 tsp vanilla extract
1⁄2 tsp cinnamon
1⁄4 tsp salt

Topping
3⁄4 cup brown sugar
1⁄2 cup finely chopped pecans
1⁄4 cup butter softened
3 T flour

Directions
Cook and peel sweet potatoes.
Preheat oven to 350F.
Lightly grease 9x13 baking dish.
Use stand mixer to mash/whip potatoes.
Mix in all non-topping ingredients.
Pour into the baking dish.
Mix topping ingredients into a coarse meal.
Sprinkle over sweet potato mix.
Bake 30 minutes.
