Ha ha. Happy St. Paddy’s Day! We just finished a delicious corned beef and cabbage dinner in celebration and a green beer earlier today.

We went with salmon and baked potatoes, with shortbreads for dessert. Normally, I would have served brussel sprouts and made a wheaten soda bread, but we were short on time.

I waited too long to buy my corned beef and the store was out when we went, but no worries- they had boneless chuck roasts on sale, so I bought a roast and some pickling spices to kinda sorta improvise. It's not the same thing, but it'll have to do. It's in the oven right now as I type, cooking low and slow.

Oops, I missed it totally. Well, no, the hotel I was staying at had some decorations, but I only noticed it when I checked in and forgot about it after that. Darn, I missed the greening of the Chicago River again this year!
