Fast trace today

Hi all . Well I made a recipe today I have made before Tallow o.o and cococnut oil I dont have precents right this moment. Not sure why but it traced much faster today. This was HP in crockpot so wasnt fo . It turned out very nice but just shows even with known recipe things can be different batch to batch .

I would guess the difference could be in how large batch you made- smaller batches are slower to trace (I think because of less water?) and bigger batches trace faster.

Good point this batch was larger than last time I made it. This recipe needs some cure time even HP to be its best.

I find that a narrower, deeper container makes my batter trace faster than if it's in a wide bucket for example. So many variables. :wink:

that's interesting. one would have thought a small batch would be fast to trace. probably why mine trace very quickly these days - i love making 2kg+ batches.
