Hi all - I made a yummmmmm-y batch of our favorite copycat Minestrone Soup today for a little hole in the wall place in town. It is yummy as is, and sometimes I’ll add some small bits of stew meat/chuck roast. The answer on the “secret” V-8 amount is 8 oz. Sprinkle some Parmesan cheese on top and serve with some warm fresh bread, preferably a loaf with sesame seeds on it. 😊

I’d love some new recipes, so share away, please and thank you. 🌸

its my favorite time of the year and as my husband reminded me today its time for Irish Vegetable soup. Here in the states most veg soup is in a broth but I LOVE the way its made back in Ireland with delicious veg cooked and pureed with a bit of the cooking broth added back depending on how thick you like it. I like my spoon to be able to rest horizontally on the surface 😋
