I'm making out my grocery list now so I can run to the store. And thought I'd share one of the recipes I'll be making tomorrow for the race.
I have been making these for 'special occasions' such as new years for several years now and now they are a regular when we watch the Daytona 500 NASCAR race.
Blue Ribbon Nacho's
1 pound ground beef
1 onion, chopped
1 can (16 ounces) refried beans
1 jar (16 ounces) salsa
1 can (6 ounces) pitted black ripe olives, chopped (I break apart with fingers)
1-2 cup shredded cheddar cheese
1 pkg. Taco Season Mix
Tortilla chips
Sliced ripe olives and chopped green onions and tomatoes, sour cream, optional
In a skillet, cook the beef and onion over medium heat until meat is no longer pink; drain.
Stir in the next seven ingredients; heat through.
Serve over tortilla chips.
Top with olives, onions and tomatoes, sour cream if desired.
They are like super uber yummmy
