I made some soap and it looks like it has cheese curds floating in oil. It looks like about 3/4 of the oil is mixed.
The NaOH I used was the bottom of the container I think it might have been a little old. I mixed it right as below.

Can I mix some more lye and mix it in?
And about how much should I start with?
If it gets zappy could I mix more oil in it?

I let it cool and now it's just crumbles when I tried to mix it.

2lb 5% super fat

Beeswax--- 2.38 %-- .76 oz-- 21.59gr
Castor Oil - 4.76% -- 1.52 oz - 43.18gr
Jojoba Oil -14.29% -- 4.57oz-- 129.64gr
Lanolin--- 2.38% ------.76oz ----- 21.59gr
Tallow (Beef-- 52.38% --16.76oz -476.18gr
Olive Oil---- 23.81%-- 7.62oz--- 216.00gr

Water 11.20oz 317.51 grams
Lye 3.83oz 108.44 grams

Sounds like the curds you're talking about is the beeswax. You need to soap pretty hot if you're using it, or it will solidify.

First, zap test what you have.

I think you probably soaped a bit cool, also. But if it is not zappy, then there is one solution, if it is zappy, another.
