I'm looking to make a few cupcakes but I'm not quite sure how much batter to make for the frosting. I'm planning on using GV shortening and a little coconut for a whipped frosting.
If I use 1 lb for the cupcakes themselves, would I need a another full 1 lb for frosting? I want enough to make nice peaked tops but nothing crazy tall.

I would start with a half pound. The frosting is not hard to make so if you need to make more - not a big deal. If you make too much have some individual molds standing by - those bars will float so it can be a novelty for children if you use a cute mold.

I just pipe mine from the same batch... for 12 cupcakes I used 2.5lb total batch. Separated out 1lb for the base and 1.5lb for the piping. I end up with extra frosting but not too much. I didn't whip mine, so I imagine that a whipped frosting would be a 1:1 for the bases.
