I can't believe I forgot Checca,
A bruchetta isn't the same without the great taste of checca.
Checca
8 Roma Tomatoes~ washed and stems removed
1 teaspoon of basil
1 teaspoon of fresh crushed garlic
1/2 teaspoon of oregano
1/2 cup of extra virgin olive oil
1/2 teaspoon of sea salt
Chop and dice the the tomatoes. Place in a medium sized bowl.
Add the basil,oregano,garlic,olive oil and sea salt,to the tomatoes.Mix gently ,Cover and refrigerate until ready for use.Serve at room temp.
Makes approx~2 cups
Can be used in Bruchetta's or panini's
Artisian Style Breads are best for this recipe.
French rolls,Ciabatta,Foccia Breads.
