Avocado oil changed colors.

Myth last gallon of avocado oil changed colors by the last 1/5 ish of the jug. It still smelled fine, so I used it. Was that oxidation? Should I be concerned? Is there something i could/should do?

I only noticed because I got a new gallon and it was bright green. The bit I had left in the older (3months) was more brownish.

Thanks for 'splainin'. The darker color could have been because the old bottle was from a different batch of oil or variety of avocado. It could also have been a slow color change over time due to exposure to light.

If the oil smells neutral -- not funky -- it's probably fine.
