Anyone using an electric roaster oven for hot process?

I have been making CPHP soap in my 4 qt crock pot since the start of my soaping addiction this March... and I would like to scale up for the holiday season. I'm thinking about buying an 18 qt. electric roaster oven (like you make turkeys in). Its temperature goes down to 150 degrees F, so I think that part is good - but is there any reason why you need the thermal mass of the crock to make the hot process work? Is anyone using a roaster for large scale HP?

I have not used it for the actual soaps,

BUT I have used one for making large batches of the oils that I use, so that I don't have to weigh out each one individually each time.

I do like 20 lb batches of my base oils.
