My experience with embeds is pretty limited, but I have had fine luck with melt and put embeds. I neither encourage nor prevent gel phase, but my soap does usually gel. It may depend some on your melt and pour base as well.

I wouldn't do citronella either. I think of it as something that people tolerate in those stinky candles that are supposed to keep Mosquitos away. I don't remember ever hearing anyone expressing a fondness for the scent.

If I am doing a small batch, I use a pound of oils. I wouldn't go much under that and I have seen others say the same, but 300 g will probably be ok if you're really set on it. If you do a typical salt bar with a 15 or 20% super fat, there's not much danger that it will end up lye heavy.

No, you don't. The recipes will be the same; just the process is different. I wouldn't discount the water for hot processing though.
