For brewing a safe and tasty kombucha I would always recommend to trust your senses.
Good quality kombucha should smell fresh and clean and should taste tangy and only slightly sweetish.

I've made the experience that during a time when I was on a zero carbohydrate diet I also had zero body odor. Not just the body, but the feces didn't smell either. I was very surprised as I had expected the opposite to happen. My guess is that bacteria feed on the sugars that we eat.
Yes, chickens like them too, and I feed some to the dogs, because they love it as a treat and it's so good for them, but they don't get all of it, I make sure to keep enough for my jello! lol
The farmers markets in rural New Zealand are very small. We have a well established soap lady in the area, so I gave up selling soap for her sake. She was very supportive and friendly with me right from the start, and the soap wasn't my most important product anyway.
