Poured my first goat milk soap into a block mold about an hour ago. Knowing it would heat up a lot I put it in the refrigerator hoping it would prevent overheating and no gelling. It is quite warm and I think it is gelling on the inside but not in the top yet.

Many times I have read people put their GM soaps in the freezer. I did not do that because I could not understand how hot GM soap can really get. I will freeze it next time.

However what happens to the soap if it freezes after the saponification takes place? Is it still going to be good soap after it thaws?
 
Yes. Go ahead and freeze now. It will saponify, albeit slowly. I freeze 18-24 hrs and then refrigerate 6-8 hrs depending on my patience lol. It does not gel when I do this.
