Yes. I just be sure to cut away as much of anything that isn't fat or connective tissue as possible. (i.e. meat, veins, discolored anything) That way it doesn't smell horrible while you're rendering. I do a lot of "blunt dissection"....pulling apart the fat from everything else with just my hands. Once I have just the fat (and connective tissue) I chop it into smaller pieces and dry render it on my stovetop. You can also do it in the oven. Just remember, low and slow. You don't want to burn anything or your tallow will smell that way.
