Hi, I want to make a soap cake using a glass pie dish. What would be good to line it with? would a plastic shopping bag work? or that make too many wrinkles?

You can use a trash bag to line molds with but I'm sure it will give you a ton of wrinkles. I'm imagining Walmart shopping bags for your direct question and I barely even trust those with my groceries - double bagged.

Another option would be press and seal wrap. It will leave a texture but it is safe and sturdy enough for soap.

There are many round cake molds that are made of silicone. Michaels have them, and you can use a coupon. Other kitchen stores should have them too.
