Identifying unidentified animal fat

I found two jars of unidentified animal fat at my parentes house witch either they or the grandparents rendered themselves but there are no labels and nobody remember exactly what is in them, so I wonder if anybody know how to figure out what it is. Most likely it's either cow, pig or sheep.

The first one is really soft smooth and creamy, absorbs inte the skin fast, not a trace of rancidity and smells kind of... Nutty? Also has a very light brown tint.

The other one clearly is rancid with a yellow/orange almost brown crust, kind of grainy and have a harder waxy kind of feeling and needs a lot more work just to spread it out between your fingers. This one is by comparison more yellow in color.
