for pumpkin cookies I made for my little grand-daughter. The cookies have no egg and no dairy (pumpkin and oil)....are cake-like in texture.

One recipe for pumpkin cookies says to use cream cheese frosting, but that's dairy.

I have no margarine at home right now, but LOTS of coconut oil. Do you think I can use this in edible icing? Ever try it for food cooking?

I could try that, although I kinda don't like crisco....it's hydrogenated cottonseed oil, isn't it?

Years agao, I wrote and asked them what oils and they said it was a 'trade secret'.

Woodie,

Glazes might be the way to go.Because your cake like cookies might not be able to withstand the weight of most frosting recipes.I have a few that have worked well for me.They will be in the recipe section here.

Munky.
