Are you using pomace olive?
100% pure cold pressed OO shouldn't give you DOS.
Some OO if you look on the label (fine print) is a mixture of other oils, too, even though the front of the label says OLIVE oil!

I have 4 year old Castile (not mine) no DOS and tons of 2 year old Castile (mine) and no DOS.

I really don't understand the huge difference we all see in Castile. I can only think it comes down to the purity of the OO.

Productsin the US is vastly different form the rest of the world. You can get OO and it's most likely OO. We have to rely of trustworthy sources to get pure olive oil without spending an arm and a leg since OO is not always just OO here. We also don't always have the benefit of fine print. Being sick is a business you know.
