I got the beef tallow from the butchers and had him grind it for me makes it much easier. Put it in a big roaster i had outside on the deck and turn it to 140 degree's and stirred once in awhile. When melted put it through strainer lined with cheescloth . Did that twice. Was easy enough no smell...
